Barb’s Salmon with Peppers and Onions

This dish is simple, healthy and delicious. It was a regular item in our household and was always a favorite of the entire family. The sauce has very few components but what it lacks in ingredients it makes up for in taste. The saltiness of the soy sauce is complemented by the acidity of the lemon. One of the most important ingredients is the olive oil; so make sure to use a high quality version.


2 small filets of salmon, wild Alaskan or farmed in US tank systems, around ½ pound – skin on and de-boned
1 red pepper, cored and sliced into strips
1 yellow pepper, cored and sliced into strips
1 yellow onion, sliced into thin strips
2 cloves garlic, chopped fine
4 tbsp soy sauce
2 tbsp lemon olive oil
1 lemon, juiced
1 lemon, zest
Salt and pepper
Parsley, chopped fine to garnish


  • Set oven to 350
  • Combine the marinade of garlic, soy sauce, lemon olive oil, lemon and zest.
  • Place peppers and onions in bottom of baking dish and place salmon on top.
  • Pour marinade mixture over the top and season with salt and pepper.
  • Place in oven and back until salmon is pink but not overcooked, about 20-25 minutes.
  • Remove and plate and garnish with parsley. Serve with the marinade – delicious.
